Honestly, when the boys are not home lunch is not much of an event at our house. I usually eat leftovers or stand in front of the refrigerator until I decide to eat something (or give up).
Recently, JellyBean and LoveBug were home from school for the day (preschool closed due to snow and LoveBug's class is on an odd schedule this week) and wanted something "special" for lunch. With 15 minutes to plan ... I stood in front of the refrigerator and found a can of biscuit dough, leftover chicken, barbecue sauce and fresh strawberries. They were delighted. I guess since it wasn't from the lunchbox it must have been "fancy".
